RECIPES FROM BARBARA'S KITCHEN

THE DEMENTIA DIARY - Cookie

HUBBY’S FAVORITE OATMEAL COOKIES

Yield: 36 cookies (each cookie = 70 calories)


INGREDIENTS:

1/2 c. soft Mazola butter flavor margarine or soft butter

1/2 c. white sugar

1/2 c. brown sugar

3/4 tsp. vanilla

1 egg

1 c. oatmeal

3/4 c. flour

1 1/2 c. pecans, walnuts or sliced almonds. Chopped. 

1/2 c. raisins

1 tsp. baking powder (not needed if using self-rising flour)

1/2 tsp. salt

1 tsp. cinnamon


INSTRUCTIONS:

  1. PREHEAT oven to: 180 C/350 F
  2. CREAM the margarine with the brown and white sugars. Beat in the eggs and vanilla.
  3. STIR in oatmeal, flour, salt, cinnamon and baking powder. Add raisins and nuts.
  4. DROP by rounded teaspoons onto greased baking sheet.
  5. BAKE for 10-13 minutes (until nicely browned)
  6. COOL on wire racks


NOTE: Chocolate chips may be added.
